I am tempted to go with the Phenom 1100t hex core, 8gb of 1600 RAM and the GTx 560ti.
Does anyone have any thoughts on this? Am I better off with a faster clocked quad core Phenom? Also, are there any compatibility issues with Phenom 1100t and 1600 RAM? I have read that some types of RAM aren't always supported?

get the i5 2500 K and drop the RAM down to 8GB 1333 keep the GTX 560ti and you will get much better performance.

I am sure you're correct, but can you explain to me why that is the case?
Is that for games and video transcoding etc?

well if you look at the page I linked it has a veriaty of game benchmarks comparing the performance of several differnet CPUs and as you can see the i5 beats the 1100t handly in every game.
as you can see on this page

the 1100T has a slight advantage of video transcoding but not a huge difference, so unless you plan on doing a lot of video transcoding and don't really care about gaming performance that much the i5 is a much better choice. The i5 is not exactly a slouch at transcoding ether so if you want to do a bit on the side that won't be a problem.
