Higher resolution also helps hide the jaggies without the muddy look. Higher resolution allows you see more details especially in the distance. Look at the ICO screen in the first video. There is a huge difference in that distance shot of the castle.
What AA does is run a program in higher resoluiton than being diplayed on the monitor then average out (muddy up lines , less sharpness) where you have contrast. In another words AA works the same as playing a HD 720p game on a SDTV which can make it a pain to read text where you want sharp clean edges. It's always better to have the pixels without AA than with it. The more pixels in a smaller space you have the less you need AA.
I really hope this collection comes to reality. Shadow of the Colossus is one of my favorite games of all time, and I've never played Ico.
If you really want to see something more impressive, play FF12 on an emulator at high res.
