Depends on the game and its mechanics. Devs choose the one that better fits their vision for the game.

I like first person but I understand 3rd person is more accessible to some people.

I think the Elder Scrolls works better in third-person than first-person. After a while you'd probably forget what race your character even is.

Doom, on the other hand, relishes in brutality, so a first-person perspective works best for that.

Some days I just blow up.

Yeah it does depend on the game, would want to play a fast shooter in third person, but overal I often tend to like third person games better.

What I don't understand is why do most third-person games these days do that behind the player and to the right perspective. I just never found that as appealing.

never liked playing ES in 3rd person cause it demands precise aim when it coming to using skills/attacking. In some moments of the game the use of 3rd person would be better, but for combat, 1st person fits better.

Depends on the game and possibly genre. I like both, though i think first person often works better with a less developed character, more simple avatar.

What i really dislike though is the over the shoulder third person far to many games have copied over the last 14 years. To me this is lacking the immersion of first person as well as the 'overview' of the classic third person view.

Third. In fact, I didn't even buy Skyrim or Fallout at the time because I thought they were first person, only.

There are quite a few first person games that I do like but it really is a bit of a turnoff for me. It's something I just accept rather than enjoy.

Before RE4, third person shooters were a mess, none of them worked properly. RE4 showed how to make a 3rd person shooter work and Gears of War refined it.

I see a few people saying that first person makes them feel more immersed. It's often the opposite for me. I often feel like a head strapped to a gun. In the early days of 3D gaming when we had games like Doom, Quake, Powerslave, etc. I'd often pretend I was a robot on wheels.
