Yep, 360 and PS3 have the capacity to run enough polygons so it's not the limit these days. Real professionals have been able to render 100% realistic cars for years (check out suurland.com) and now they're able to do that with flares, reflections and all real-time which is very impressive. The things that are paid more attention these days are reflections, flares, motion blur, background blur and soft focus in addition to the 'dirtyness', anti-aliasing and sharp textures. I can make an image to you to show what these filters do if you're interested.
PS3Owner: check out Forza 2. There are some not-so realistic things about GT-HD. For example, in the top picture you can see how the filter is actually replicating the objects in background and not really blurring them.
