Modern DDR3 RAM delivers some 10-20GB/s of bandwidth. Consoles usually come with the same kind of RAM used on GPUs, but for general purpose; for the next generation, bar some rumors that have Durango using way more RAM but standard DDR3 in nature, that should be at least 100 GB/s of bandwidth; enough to account for the deficit on sheer volume, I think, not to mention the lack of other kinds of processes running simultaneously.
It's kinda easy to estimate, really. Multiply the data rate for the width of the module in bytes to get the value in GB/s. DDR3 has an 8 bytes module and effective transfer rates of 1000-2000 MHz; GDDR5 uses 32 or 64 bytes at 3000-4000 MHz. It's rough and there's more to it, but that's about it...
