Well I have to pull you up there. One statement is clear regarding Wii U relative to PS360, the other is ambiguous. "More RAM" is clear and unequivocal. Wii U RAM is bigger than PS360 RAM. Though how much more? We don;t really know do we? "A great processor" could mean anything, it could mean "almost as good as PS360" or "as good as PS360" or "better than PS360". WHy didn;t Gearbox dude say something equally unequivocal like "superior processor". It's almost like Gearbox dude was deliberately vague in describing the CPU. Perhaps he couldn't be more definitive because Nintendo haven't settled on the CPU spec just yet.

Anyway, even if Ninty wan't looking to be at the cutting edge of console tech for the upcoming gen I can't see Wii U having any key specs inferior to PS360.

You are mis understanding the point he was making. he is pretty much saying Nintendo care more about Games then Specs and want you to play the games and not the graphics

Nintendo does not usually confirm or deny rumors, but they did go out of their way to reply to this particular rumor.  To just say that the console will exceed the current HD consoles without further detail would have been sufficient to dispell the rumor.   But the fact that it doesn't even address the point, it raises suspicion as to the power of the WiiU.  

I agree that Nintendo cares for gameplay and value more than graphics but I have to say that the WiiU MUST be at a minimum equal to the PS3.

Not really.  People were skeptical about the Gamecube's power compared to the PS2 at first, until Factor 5 got ahold of it and began publicly praising its capabilities.  Nintendo didn't go out of its way to say that the 3DS was more powerful than the PSP, either.  Not since the N64 have they really cared about hardware boasting, always pointing out what makes their systems unique and how gameplay is paramount.

Based on what we know, I think you'll be pleasantly surprised come E3...

They didn't go out of their way to repsond to it, they were asked about it by hundreds of journalists.

And this is how they always respond to rumors and speculation.    They dont' give you a direction to go in one way or the other.  They never do and ecpecting them do it is a waste of time.  And basing an opinion on the Wii U from this standard corporate style non answer is just as wasteful.  Don't project any presumptions onto a neutral stance.
