I haven't done my research but I strongly suspect the fat vs. starch debate is a false dichotomy next to food that's scientifically engineered to maximize consumption and general ignorance about what we are actually shoving in our faces.  (The latter problem in part a side effect of "unnatural" foods.) 

The combination of fat and carbs is bad because of how carbs affect insulin and therefore fat storage. Pizza is unfortunately one of the worst food there is. Very high glycemic index, very high carbs and fat. Also, keep in mind that pizza and junk food in general also have an insane amount of calories. One small pizza can easily have more than 1k Kcal and it has very little micronutrients. On the other hand, dietary fat alone doesn't cause fat storage. This is why keto and very low carb diets in general are so powerful for fat loss, regardless of whether they're healthy or not. Well, they can't be worse than eating sugar anyway.

All this is well documented, but there are too many interests involved. Think about what would happen to the world economy if everyone suddenly stopped eating sugar and starch or at least drastically reduced their consumption. Both cause dependence, especially sugar, so the more you eat them, the more you want to eat them. Both are poor from a nutritional perspective (sugar can be called an "empty food", it's 100% calories, 0 nutrients, and it's literally everywhere), so you NEED to eat other stuff to get most of your vitamins and minerals. They are the main culprits for obesity and diabetes. So eating less of this stuff would result in less food eaten in general (no carbs addiction=less food eaten on average), so less money for the big food industry, less food-related illnesses, less money spent for medicines (diabetes and obesity are a real business in the USA) and doctors. The economy would collapse. The very people that should tell you what to eat to stay healthy cannot tell you the truth because they would trigger a massive economic recession (and most of them would lose their job). The classic food pyramid itself is one of the biggest lies in the history of mankind and its sole purpose is to ensure that enough people get addicted to food and sick enough to make the food and pharmaceutical industries thrive.

Bottom line is, you can't be avoiding fat and eat cheese-covered pizza "to compensate".  Your example contradicts your point.  I reject your argument that the low-fat diet has seen wide-scale adoption by the world, or at least the American, population ("adopt" as distinct from "accept as preferable").
