That's how independent devs who aren't big enough to self publish operate. They need somebody to fund and publish the game. For them at the moment that's Microsoft, so unless Nintendo were to offer to pay them for a game, they're unlikely to make one for Switch.

They could, but they seen quite comfortable with Microsoft. Out of all the dev teams MS has bought, I'm surprised this wasn't one of them.

Moon Studios are quite unique in how their development team is spread all across the world rather than locked down in a Studio and due to that probably isn't ideal for a big platform holder to take on board.
