I've been playing Ultra Street Fighter IV with my co-workers during lunch breaks so I'm REALLY hyped for SFV because of all the good things I hear about it (like links being easier to do, V-System being less execution heavy than Ultras, no more re-releases)

Where do you work??  My mind says Gamestop, but my eyes says a lawfirm because of your avatar xD

I work as a Web programmer which means we all have somewhat capable computers that can run Ultra Street Fighter IV. We get an hour for lunch which is enough for a quick bite and some SFIV rounds.

That sounds like a chill place to work at :)

I love fighting games, I've just never been a fan of Capcom's new SF engine. I've always thought that engines like Guilty Gear or King of Fighters XIII were the way they should've gone, so it really doesn't inspire hype in me to see a new Street Fighter based off an engine I really just don't like (on Street Fighter). I think it works great for Tekken, because Tekken was designed to set itself apart from Street Fighter.

Plus, how'm I supposed to get hyped for a game with 16 characters, when 14 years ago, they were able to produce Capcom vs SNK 2, which had 21 characters from the SF franchise alone (out of a total of 48)?

Couldn't agree more. I loved the fluidity of Third Strike and it remains my favourite in the franchise. I was disappointed with the relative clunkiness of SFIV (I'm no pro player though, so what do I know).
