My monitor has 1440p, but as a low-spec-gamer, I don't use the full resoultion all the time. On my Legion Go I regurlarly switch to 1080p or even 720p because I like 60fps a lot. The Switch won't run at more than 1080p anyway. I guess the PS5 is utilizing 1440p, probably rendering at 4K or something, I don't know. But I haven't used that console for months. Last thing I did with it was putting a Bowser sticker on it that Nintendo sent me when I ordered a N64 Controller the other day. =P
