Well since I am a huge fan of ff7 (I own the game twice) I can give you some tips.
Regarding the materia,
in double weapon slots you should put two materias which can be combined like "All" and "Fire" so you can use
Fire attack on all enemies. Basically you can experiment, but if I remeber correctly you have a tutorial after the first
few hours of the game, there you will find out everything you need to know.
Feel free to contact me anytime. Later I will explain you how to get the "Knights of the round" materia, you will
need it if you want to defeat the 2 optional Super Bosses (Emerald Weapon and Ruby Weapon).

Final Fantasy fans are separated into three main groups... the FF4 or 6 group... the FF7 or 8 group and the FFX group... or you could look at it as the NES/SNES, PS, PS2 groups... the further back you go the more disdain you see for later games... till you get so far ahead that you find idiots who don't even know who Kefka is (hint: greatest FF villain ever).  I imagine we'll have a FF13 group pretty soon.

Don't even bother fighting either of the super bosses if you can't set several hours of you life aside... they make the last boss look like a joke

In most FF last boss is a joke. At least, if you train a little. In VII, LB can be defeated in one summon.

And what about the fans who like all FF games equally, without discerning or hating older or newer FF games?

I played it for the first time myself a year or so ago.

Make sure that you give specific people specific roles to fill with Materia - try not to double up on different magics, at least no at the start of the game.

I hope you enjoy it. It's really a fun game.
