GTA III trilogy would be cool but it would look like ass in HD unless they seriously remodeled the whole games.

I would say the PC versions of these games looked pretty good, actually.  They have the assets to upgrade, at least somewhat, already.  Even the resolution and framerate improvements were a pretty big deal (for me).
