Elder Scrolls: Oblivion.
I've only played VC so far, because I love it and I can't imagine spending time playing anything else until I've had my fill of VC goodness.
My kids have played LBP in its entirety (well not collected all trophies but played every level that comes with the game). Now they are on to playing user created levels on line. They have had a blast, and I really like the look and game-play style of it. One of the all time great side-scrolling platformers I think.
One of my kids has started playing Tools of Destruction and it looks awesome, and will looks to deliver the same general gameplay experience as the PS2 Ratchet and Clanks, only in beautiful HD visual quality and detail.
I intend to get Flower, and Fat Princess and probably a few other PSN games. But I have to pace myself.

I've you like SRPG's, I recommend giving Disgaea3 and Valkyria Chronicles a try. They're both excellent games.
Killzone is very good and their's a demo up since you said you're iffy on shooters.
Uncharted is a lovely game and there's also a demo up, I believe.
InFamous is a gallon of fun, I recommend it to everyone. Oh, there's also a demo on thee PSN store for it too.
RE5 is a nice game if you can get used to one of the 4 available controlls. There is a demo up of this aswell. There's online but it's a piece of DLC for 5 dollars or something, not sure. RE4 is the game that got me comfortable enough to try other shooters.
Burnout Paradise is really fun but I'm not sure how the online community still stands. Back when I used to play it was usually packed, things should still be good.
