I've always used the right pronounciation, because in Sweden we pronounce vowels the same way they do in Japan. So "i" is "ee" here too, rather than "eye".
I guess the Japanese one? (Ee-ko?)
Ico technically isn't an English word so, this isn't the same case with English titled anime/Japanese media (such as Dragon Ball, Sailor Moon, etc).

I don't think there is a wrong way to say it... names change from country to country, heck my first name is even unpronouncable in english, if i didn't accept a change, i'd never recognize it when someone calls me.

Well, the whole Project Trico thing convinced me it was pronounced like 'eye.' Why would it be project Treeco?

No, because that's an american brand and is marketed as such. Everyone knows to pronounce it in english.
