I don't think graphics will change to much in the final version, it's coming in May according to the video. Like I said, it's probably like FZeroX for N64, they sacrificed the graphics to have a fluid gameplay.

omg I thought I was the only one remembers Extreme G. That's the first game came to my mind when I watched first 30 seconds of the video. It's just that the cars are flat instead of rounded like in Extreme G.
