i gotta say sephiroth was the most epic, there was such a build up and a hate against this guy when you finally whoop his ass its pretty amazing. but necron from final fantasy 9 was pretty fucking amazing, grand cross would rock your world.

Epic would be either Emerald/Ruby Weapon from FF7

Sephiroth is a no brainer.
