JRPG - Tales of Vesperia, Lost Odyssey
WRPG - Mass Effect

You're makin the right choice, 360 owns
Lost Odyssey would be my first pick for JRPG. I just beat it this past weekend and it was about 60 hours well spent. The game is VERY long even if you don't do side quest it will be a minimum 45-50 hours. The graphics are great and the boss battles can be very challenging. Truly one of the best JPRG I ever played up there with FF3 and chrono trigger for me.
Mass effect would be for WRGP. I have beaten 3 times and working on a 4th though doubt I will ever finish it lol. Is a wonderful game and you will want to play at least twice to truly experience the game. With the ability to install it on the hardrive coming soon I am sure it will even load and play better though honestly I never had an issue.
Finally you HAVE to get gears of war 2!

For you, I'd recommend Mass Effect and Bioshock; I can't comment on the JRPGs.
Also, XBL has a free demo of Dead Rising. Give it a spin to see if it's your cup of tea.
Based on what you said:
Tales of Vesperia, Lost Odyssey for JRPGs.
TOUGH choice for WRPG - I would say get Fallout 3 since its all the craze now and then Fable 2/Mass Effect are absolute musts later.
Your Other choice I would give to BioShock as its got some RPG elements and then GTA4 since its got the story/RPG/sandbox elements - seems to be what you like.
To try your hand at shooters, get Gears 2.

Hmm, Vesperia won't be in Europe for a while. But enough JRPGs to pick anyway. No-one really mentioned Blue Dragon. It's not good.
As for Gears 2: I want to play 1 first, I like to know the story.
If you value a story in a shooter go with Bioshock or The Orange Box. Gears doesn't really have a story other than just kill the bad guys. Gears 2 is said to have a story and it's getting mixed reviews on the story. You might also want to look at Left 4 Dead when that comes out.
I love Blue Dragon, but i thought Lost Odyssey was better.
Gears of War really doesn't have a story, so you wouldn't be missing anything.

Blue Dragon was cool actually. I really enjoyed the game! I found the children in it charming (but some could find them irritating) The battle system IMO was better than LO except without a patch it was too easy.
Blue Dragon is just a childish version of LO, its definately a fun game to play and there are many who prefer it over LO for different reasons.
