What's really needed are engines built ground-up for Wii, but I guess that's too much mork for these massive publishers. Only a small, private developer like High Voltage could pull off a feat like that.

You would think that the big companies would have the people and the resources to devote to that kind of thing.  Unfourtunately, it doesn't appear like the big boys are nimble enough to adapt to the changing market.  The change came too quickly for them, and I'm not sure when they will really "get it".  It does seem like they are getting closer though, so I'm hopeful.

They are about to be passed by the smaller, more agile High Voltage.  Hopefully they have a real hit on their hands, and can grow with that success.
