I had a PS1 but for some reason never played any of the three Spyro games back in the day...now I´ve been thinking about maybe getting the Spyro remake, obviously the graphics are top notch but does it still hold up in the gameplay department?...

It's a lot of fun. Spyro: Year of the Dragon is my favorite, but the other two are amazing as well.

I discovered the Spyro trilogy back in 2013, and I loved it. The remake is very well made too.

I have yet to play the remake but I loved the first Spyro. I can't speak that far about the sequels. Not bad just decent. Tho they like many PS1 era games are very much a product of that era.

If you enjoy other 3D platformers of that era like Banjo, then yeah, I'd say you'll most likely really enjoy them.

They hold up very well.
