Seriously, did everyone just forget all the realistic style games on the PS3, 360, Wii U, and even the Wii from time to time? The idea that they can't do a more realistic style because the Switch is too weak is beyond silly.

It depends on what they want to do in the game. People forget that quite a few games were showed at first with realistic graphics then downgraded to a "stylized" version later on. If they wanted realistic graphics, something would have to sacrificed. The NS will limit what they can do with the game since it's not a true home console. It all depends on what exactly nintendo wants to do in the game and what want to prioritise on. I think they'll go with a stylized look so they can do more in other parts of the game.

Quite a few meaning one, that one being Breath of the Wild, which wasn't downgraded because the tech demo was a TECH DEMO. It was two rooms and a giant spider. And on a technical level, not all that impressive compared to later games on the Wii U.
And then there's the case of Xenoblade. A series that has stylized characters to varying degrees but features a realistic or pseudo-realistic approach to its environments in terms of textures, folliage, etc. Including XCX, which was the most realistic of them all and released only a few years ago. And that game featured an enormous open world.
And honestly, if the "levels" or regions are the size and complexity of Prime 1-3, that would be plenty good enough. I would look at Prime 3, that's where the graphics will probably land at. Mildly stylized mainly in the area of character models and use of color.
