Tetris
Metroid

I am just quickly listing those off the top of my head, because I have played all of those games recently and I still enjoy the hell out of them.  To be fair, there are other games, like original Final Fantasy, which I used to really love, but don't hold up as well over time.  Action games on the NES are still awesome though, while modern action games are mostly garbage.
