I've never played Dark Souls, so I don't really get this whole 'save' thing. If I end up getting it, I'll just try to have a good time with the game.

DS have only one save slot per character that auto saves - you can also save when you're exiting game. So wherever you are at the moment and in whatever crap you got yourself into, it will be reflected next time you start the game - there's no reloading of "safe" save from before - it's part of the reason why Souls are considered hard (although, there are way more harder games).
I can't find any info on what exactly they've changed for Switch version, but if it's only Save anywhere and nothing else is changed, then that's just convenience - but then again, you can be distracted in middle of any Souls when you play on any console or PC, and FS didn't care to implement it ever since Demon's, so there's that...
