While I think Pokemon Switch will sell extremely well (Like 25 million) I think beating Red/Blue is a huge stretch. Due to the amount of sequels per console Pokemon games are more front loaded, it'll still do great numbers, but I think beating Gen 1 is highly unlikely.
Animal Crossing is possible, but not a guarantee. If it's kinda lazy like City Folk I wouldn't put much stock in it, but if it's great, then I think there's a good chance.
Metroid Prime 4 is the most likely of all of these. Unless it sucks it's hard to see how it won't pass 3 million.

Only way is if its heavily bundled and considering Pokemon has never been heavily bundled, i dont see it happening.

Sales might be high in the long run if they don't release a sequel or an Ultra version the following year with very little new content...
Though this new business model might be working for them right now...
But there may be people inclined to wait a year to get the sequel with more content instead of immediately embracing the new generation upon its initial release...
As long as they embrace their current strategy though, I can't imagine seeing Gen 1 sales anytime soon...

Metroid Prime 4: I think it has a very good chance. If the game is just as critically acclaimed as the original trilogy, (90+ Metascore), and has great marketing on a far more successful console than the GameCube and with a far bigger dedicated gamer audience than the Wii, I think it will be guaranteed.
Animal Crossing: This one will be a little tough. As it stands, Animal Crossing: New Leaf is set to become the best selling game in the series. (It's only ~160k short of Wild World's shipments, https://www.nintendo.co.jp/ir/en/finance/software/3ds.html, so I think it's guaranteed at this point.) And New Leaf will continue to sell even after it passes Wild World and eventually pass the 12 million mark. So, Animal Crossing Switch will have a tough battle ahead of it. However, there's a big X factor that could tip the scales in its favor; Pocket Camp. If Pocket Camp was able to draw enough interest and intrigue from people who had this as their first Animal Crossing game, that could lead to a new influx of fans to buy the Switch game and eventually become the best selling game in the series. Add that to the fact that the Switch has been home to various best selling games in series such as Zelda, 3D Mario, and Splatoon (not that hard to begin with), it is a good possibility.
Pokemon: Unless Gen 8 is a similar change up or innovation for Pokemon like Breath of the Wild was for Zelda or Odyssey for Mario AND we have another big phenomenon. I don't think this is going to happen. It may have a shot at 20 million and catching Gold/Silver, but 30 million and catching Red and Blue? Not gonna happen.

Pokemon... the ONLY way I can see this happening is if they make pokemon go BOOM in china. 30 mil is HUUGE. Will probably catch up to GS though.
Metroid Prime 4 will way outsell any previous Prime so long as the game is as good as it can be.. That much is a given.
No for Pokemon. If they couldn't do it during the DS era in which the games are even cheaper, I don't see the Switch version reaching 30 million.
But who knows it might pull a GTA5 on us

I'm thinking no, possible, and likely. No pokemon game after the originals have gotten close to those numbers, and I'm not really expecting the next one to change that, unless it radically changes the game.
12 mil seems hard to beat, but if AC is still as strong as before and if they Switch continues doing well, I think it could be possible, but it'll be a challenge.
Metroid 4 on a new thriving system I think has a good chance to make a comeback.
