Surely some sort of update would enable the Switch to read input from the pad.

Improve wifi signal which is a bit weak on the Switch.
Maybe because they didn't want interference with the joycons signals.

There's also a controllers update .. what would they do? 

It records 30 seconds before, as explained by the newsfeed of your Switch.

Therefore, when something great happens in-game, you can absolutely record it AFTER it happened rather than stressing yourself at capturing just at the right moment and missing all the action. This is on purpose.

I do think it's a brilliant idea.

Just some additional info on the video capture format (which is the same for docked and handheld):
It's an MP4 file, 1280x720 resolution, 30 fps, encoded as H.264, with AAC stereo audio at 48kHz. The bitrate is 4.38Mbit/s.

It seems that it works wonders with the Playstation headset. Also, you can have it in undocked mode with a USB-C to USB adaptor.
