You can, im using the pro controller right now
You can, but it was designed for motion controls and is actually more fun that way. Using a pro controller makes it feel much less engaging.
I only managed to get just one match in right towards the end, (Had lunch with some family members as I'm currently in Mexico getting ready for a reunion) I played as Ribbon Girl with normal controls. Based off the little I played, I gotta say, So Far. So Good. Hopefully I can find the time to get more matches in tomorrow and really get used to the controls.

I played for the full hour and although the motion controls took about 5 matches for me to get used to, by the end of it I felt very comfortable playing. For some reason, though, my left punches seemed to turn in the opposite direction I wanted them to about 90% of the time. Still had a great time though and am actually way more interested in buying the game now.
