Honestly there are too many to list. Jet Li, Stephen Chow, Jackie Chan, Donnie Yen All got some good ones.

 

Also Big Trouble in Little China is a hilarious american spoof of the genre.

Oh and if you aren't looking for martial arts, and more drama. Anything made by Wong Kar-wai is great. My favorites particularly being the loose trilogy Days of Being Wild, In the Mood for Love, 2046 and Chunking Express+ Fallen Angels are all awesome.

Oldboy is a huge masterpiece, the focus is not action but you have to see it anyways

Yass, Wong Kar-Wai is a genious, I would add Happy Together to that list.

Also I still haven't seen The grandmaster but it looks like it would fit with what the OP is looking.
