Of the ones you listed I would hope Persona 5 gets it, but it's probably going to end up being either Zelda or RDR2. I never personally understood the acclaim given to the first Red Dead Redemption, since it was "just" a good game instead of the masterpiece so many made it out to be. Still, Rockstar generally gets very good reception for most of their games, so I wouldn't be surprised to see that happen again.
I'd say it's going to end up being Zelda, most definitely. With the only real competition for the rest of the year being RDR2 and *maybe* Mario Odyssey. I think that most major publications get cold feet when it comes to crowning JRPGs as GOTY, so it rules out Persona 5. And Horizon will probably end up with the lowest Metascore of them all.
Also, the OP should be updated to include PS3 as a platform of release for Persona 5.

Zelda winning a lot of goty is like overwatch winning goty in my opinion.
If Overwatch can win GOTY, and not win in the Best action category.. anything can happen.
Xenoblade 2 will crush everything and will get a 100 Metascore.
My bet with The_Liquid_Laser: I think the Switch won't surpass the PS2 as the best selling system of all time. If it does, I'll play a game of a list that The_Liquid_Laser will provide, I will have to play it for 50 hours or complete it, whatever comes first.

Zelda is hard to beat, I'm not sure if anything is gonna top it. Excellent game, a bit disappointed myself story wise with only a few dungeons but there's so much to do in the game its pretty awesome.
