For me its Bloodborne, easily. Best gameplay, scenario/art design, lore and some of the more memorable bosses of the series.

It's just gotta be Bloodborne.

Playing Nioh right now, and while it's got my favorite setting of all the Souls games, and a quickness to it that I love, it's not quite as clever as Bloodborne, and doesn't have quite the same enemy diversity and attack complexity. Still an awesome game, the best I've played so far this year. It's fun for a Souls game to have a foundation in something I actually know a fair bit about (Japanese folklore and modern history). Fun to see how something like the Battle of Sekigahara or a Kirin is depicted in a modern HD game. Plus being a big fan of the tv series Shogun has made it a unique treat.

It's weakest point is build variety on the first half of the game, and it's still not as bad as Bloodborne in that regard.

 

imo:

DaS3 > BB > DaS > DaS2 > DeS.

 

Still working on Nioh so can't rate it yet.

Bloodborne easily. I haven't played Demon or Dark Souls 1 but i don't think they would change my opinion considering i found Bloodborne to be far superior to Souls. Nioh is really good as well, i love the gameplay and i would say its gameplay is better than Souls but it lacks in atmosphere and immersion compared to FromSoft's work.

Didn't played demon's souls and nioh yet. For me best souls games currently are
Bloodborne
Dark Souls
Dark Souls 3
Dark souls 2
Some mechanics in Bloodborne (guns) just better.
