My body and brain use food )and water) as fuell to do things since I am not eating while I am dead and my body isn´t processing food and that energy is simply stored within me for bacteria to feast on. So that they may live, move and do stuff. So my answer is the energy my body and brain contains simply stays within me. If you would nurn me my energetic potential would still be pretty high.

You believe that the brain is a complex stucture of neurons. Lets say tech advances to the point we can copy that structure into a digital space and on your death bed you choose to enter a simulation....read the OP fr further elaboration. What vodoo do you do, do when you go to the "afterlife" or simulation?

I would start to create my own Utopia on a tropical island with a giant beach, with some people most of them being really good looking woman (Let me be sexist in my own world). With plenty things to do the great thing is if I want something done on the island I can simply think of it will be done. It would all be some sort of massive lucid dream and it would be great for a while and when I am doing with my island I am going to create new worlds. Time isn't an issue anyway so why wouldn't I build my perfect world.

Of course energy can be created. Empty space has energy in it and it is created constantly, is it not? And then there are of course vacuum fluctuations, creating virtual particles all the time, some of them make the jump to become real particles. 

It is debatable if energy can be destroyed, but not impossible. It can and will however transform into states that make it totally unusable. Once energy reaches maximum entropy, there's no turning back. You can't use such energy for shit, not for generating power and certainly not to create a mind or anything.

My favorite afterlife would be the ability to go anywhere in time and space, just witnessing events and places in the universe, even without the ability to interact.

Well, I'll do just the same I do when I'm sleeping and not dreaming. Aboslutely nothing. Maybe I will be reborn in some other place or even in a whole other universe, who knows. Going by mathematics, it's quite possible. The world around us seems pretty much endless and the fact that I exist proves that it is mathematically possible for me to pop into existence. The probability of that happening is very very tiny. But just mix in an endless universe and it is bound to happen over and over and over again.

So yeah, considering that, being reborn makes the most sense to me right now. But if that doesn't happen, I won't care. I won't be physically able to care. I literally couldn't care less. Oh yeah, and make no mistake, we're not talking about that classic hollywood reborn shit. If I or any of us gets reborn going by mathematics, you won't have any of your memories. You start blank, just like in this life. You won't ever know that you have lived before.

All I know for certain is if I die today I'll demand they send me back to some version of my living room so that I can play Breath of the Wild. After that... I donno, get some beer and go fishing?
