I've seen this thread but have no cheese in the house except some hard italian cheese I grate on salads.

I'd love some extremely strong cheddar now on a cracker or two.

Only if you haven't tried a wide variety of cheese types beforehand.If you have and you still prefer mild cheddar then no biggie.

Personally i love extra mature cheddars, they do a 48 month one here that is crazy good.It starts to get these crystals in it when it's been maturing for that long.I enjoy most types of cheese though including blue but i'm not big on soft cheeses like brie and camembert.Too earthy.
