I have to do my shameless plug here, if you like JRPGS in the slightest please do yourself a favor and get Dragon Quest VIII. You can get it cheap anywhere. You won't regret it.

As for fighting games, I recommend Soul Calibur III and Virtual Fighter III.

RPG
-Star Ocean Till The End of Time
-Makai Kingdom
-La Pucelle Tactics
-Radiata Stories
-Xenosaga Trilogy
-Persona 3 FES

Fighting
-Marvel VS Capcom 2 (since you cant get it digitally anymore)
-Capcom VS SNK 2
-Tekken 4 (5 is good but you can get 5 DR on PS3)
-Street Fighter 3

I have Marvel Vs. Capcom 2 on Dreamcast, PS2 and PS3.  The PS2 version is the worst version while also being the most expensive.  Same case with Street Fighter III, and CvS2.  The PS2 versions of those games are bad/laggy..  I already have Tekken 4.  I got as third copy today when I noticed it was in the disc drive of my JP PS2..

Being realistic, I'm not going to get through any RPG games any time soon.  The only one on my list is Namco X Capcom.

I have to agree with you about DQ8, though honestly I really love the english voice acting for the game, it's charming.

As for JP games, I had a lot of fun with the Cowboy Bebop game.
