The problem is, what if that saloon shootup was the primary scene the trailer was built around in introducing the main character? You edit it out and get an incoherent mishmash of scenes with a new Red Dead title at the end? When a game is still in development, reveal trailers are planned pretty carefully and are probably pieced together through the months prior to E3. I doubt if it was planned, that Rockstar was just conveniently sitting on a second announcement trailer labelled "just in case".
That said, it's undeniable that the Days Gone gameplay demo felt somewhat out of place. It was brought on fairly quickly, the transition into it wasn't particularly smooth, and it seemed like they had not planned for it to be there in that spot considering Days Gone had been mentioned closer to the beginning of the show. Combine that with the somewhat weird length of the show (what, about an hour and ten minutes?), and it seems obvious that something was sliced out.
