Nintendo's hardware is usually simpler.
I.E. The CPU architectural differences between the Gamecube, Wii and Wii U isn't something that is excessively massive from an instruction point of view.
The GPU is PC derived stuff.
It is probably thanks to Nintendo that PowerPC got a leg up and got better understood in the Emulation scene, helping accellerate the development of the Xbox 360 and Playstation 3.

It's all architecture based. OG Xbox instruction set is actually more complex than most would think, hence the lack of a good og Xbox emulator.

Partly true.
You don't *really* need to emulate the original Xbox though... Majority of the games are already on PC where they look and run better anyway, Nintendo tends to have more exclusives.
Plus if you were to look at something like... Cxbx the train of thought is to "convert" the Xbox game to be playable on Windows rather than to emulate, it's simpler, more efficient, this is also likely the same course of action emulator developers will take when it comes time to do Xbox One and Playstation 4 emulation.
