Because it lacks certain things that your brain translates to good taste. Mainly fat and sugar. Add some of that to the recipe and it will instantly taste better. It's also the very same reason why it does taste so much better with toppings. Because you're adding fat and/or sugar with those.

The reason it smells so good lies within your memories. Your brain links every one of your experiences together. Smells have a deep link to emotions in our brain. Whenever you experience something good and have a certain type of smell in your nose, your brain will remember that. Repeat said process and the effect will become stronger and stronger. So, remember those nice breakfasts at home in the good old days when everything was just perfect? Take a guess what smell you had in your nose in such moments. It's also pretty much the reason nearly every person in the west loves the smell of coffee in the morning.

Bread is my weakness. Its bad for you but I just love it.

its not bad for you, its just that it contains a lot of carbs. too much of it can get fattining real quick.

unless the bread you eat has high fructose corn syrup, in which case its bad.

Wrong % of ingredients on purpose to reduce production costs, plus UK + food = disaster.

My wife feels the same way about coffee: smells great, can't stand the taste. But she loves bread. I don't. I love coffee. Why in the hell are we married?

I live in France, and it's easy to find bread that smells good and tastes good.
