Ok so I just installed the latest version of dolphin.

hat do I do now and how can I play mario galaxy?

I got galaxy 2 n disc but nope no galaxy 1

You need a) A copy of the game B) a wii mote + Bluetooth adapter + Usb/wireless wii motion sensor bar unless you want to rebind it to the keyboard or controller

Then u click on "Open" on the left, select the iso and bam, it will work

If you have the game, then u gotta go "File" and then "Boot from DVD Backup"

Could I not play with a keyboard
I got a wii motion plus remote(not from the bundles but came with the wii(not acessory either)
I dont have a bluetooth adaptor though

You could but its not really a good experience.

In order to do it, you have to click "Controllers" on the right then go to "Wiimotes" in the middle and where it says "wiimote 1" select "Emulated wiimote" and the click on "configure".

Then where it says "Device," select "Keyboard Mouse" and then u just configure everything by clicking on it and then pressing a key on ur keyboard or mouse and then click okay when you are done.
