If somehow Ubisoft stops being the piece of shit company that it is, I say go for it, Zelda-like dungeons with AssCreeds' better mobility and jumping mechanics? (Fuck auto-jumping, really) Sounds like a good mix to me, though, a better mix would Zelda May Cry or Hyrule Hearts, but I can see this working.

I don't think that they'd give Zelda to a company like Ubisoft, they've been getting too much negative press recently...

That makes no sense. They developed the game.
Assassin's Creed is all about killing people. In the entire Zelda series, I can only think of two instances where Link kills another human (the end of Wind Waker and in Majora's Mask). That's why this would never happen.
No way in HELL! For various reasons. But mainly:
Assassins Creed likes to incorporate real history in their games (Cesar Borgia, George Washington etc). Zelda is fantasy.
What makes a Zelda game great is not the same thing that makes an AC game great and:
Nintendo is known for their utmost quality in delivering a complete game, something that Ubisoft has been notoriously NOT doing recently. There might have a disagreement in how important this is...
