Your argument against the other games lacking originality can also be pointed straight at Destiny. It might have been a great concept if it had come out before the likes of Borderlands and other MMO FPS', but it didn't. It's just hyped enough that people that weren't into MMO FPS' thought it was innovative because they hadn't played anything like it before. The whole game is a rip off and executed worse than other games in that genre.
I actually think whilst Shadow of Mordor copied AC and Arkham in core gameplay, it also added quite an innovative mechanic with the Orc Chiefs strength stats and is far more innovative than Destiny. I'm actually not a huge fan of the mechanic but I can appreciate the thinking behind it.
Please note, that I actually like Destiny; I did find it pretty addicitive and the gameplay mechanics are near perfection, but your argument doesn't really stand up to scrutiny.
