Tropical Freeze because I think it is just the most refined game out of them all. Also, it's visually stunning and there's quite a bit of replay value. Although Rayman Legends is a close runner up for me (I haven't played Shovel Knight yet, so there's that).
Edit: And it gave me quite a bit of trouble due to the difficulty, which I can really respect. Not many games go out of their way to provide a real challenge anymore.
Donkey Kong had fun and challenging level design, extra power-ups to diversify the gameplay, great graphics, tons of replay value and the controls were tight and responsive. I felt that it improved greatly on DKC Returns on the original Wii and is one of my favorite Wii U games.

Rayman Legends was the best 2D platformer I ever played.
The overall level design, music, art style, and tight gameplay make it one of the best IMO.

I think it would be between Rayman Legends, Shovel Knight and Mighty Switch Force! (even if this one is more a puzzle game). But I think I would stick with Ubisoft's title. It's very fun.
My bet with The_Liquid_Laser: I think the Switch won't surpass the PS2 as the best selling system of all time. If it does, I'll play a game of a list that The_Liquid_Laser will provide, I will have to play it for 50 hours or complete it, whatever comes first.
New Super Mario Bros U. Highly underrated. Level design and physics are the best there is.
