I'm going to have to go with GTA: San Andreas; sure, now it seems cliché and restrictive at times compared to far better open world sandbox games but it really was the Xbox game I gave the most time to by a long damn margin. That said there are others like Psychonauts, Devil May Cry 3, and Burnout 3: Takedown which where true gems of the time.
