Glad someone else liked it.  I am a fan of trying to find games done up in film/animation that generate interest in them.  Hikaru No Go is another one I believe, for Go.

Still clutching the straws for a potential third (and final) season of Kaiji, still praying under the stars for that to happen. Why don't take a peek into One Outs blends the psychological nature of Kaiji/Akagi with the game of Baseball :P

Tsubasa Chronicles- Awesome series
Fullmoon Wo Sagshite- sad fantasy series
Hellsing Ultimate-really awesome action series!
Trigun- another classic
Ghost Hunt-I personally love this series
Clannad- Can be a real tearjerker
.hack series- mmorpg like anime
Fate Stay Night series-awesome
Angel Beats- can be pretty sad
Gundam series- Prob should start with seed since older ones have dated animation, but if you can stand them go on ahead
Attack on Titan-currently airing and really good
Ghost in the Shell- def see this one
Blood+- one of my fav series, highly recommended
Code Geass- good series
Death Note- another good one

Evangelion-Watch this!

Damn I hate spoilers!!! I was doing some research on some of the anime and read comments about them only to have people spoil the plot!! damn you internet!!

Inspired by Hikaru No Go, they did an anime based on Xiangi (Chinese Chess) where the kids in the show end up play a VR version of the game, and the series is based around it:

There is also an anime based around Shogi (mute girl has trama from her past, but is real good at Shogi/Chess from Japan):
