hmmmm...GoW3 is most epic in terms of scale of the battles, but Skyrim is most epic in terms of the world (including backstory and cultures of the different races and groups).

Define epic.

Quite a few games have had an epic feel for me.
Baldur's Gate 1 & 2
Mario 64, not because it's an epic story or anything, but because I felt like I was playing a complete masterpiece that would be remembered forever.
World of Warcraft back in vanilla when raids were 40 players. There was nothing like downing Onyxia or a Molten Core boss for the first time.
Halo Reach for the sheer scope and scale of it. Also, knowing how it ends really added to it's epicness for me.
Plenty of others as well, but those ones stand out.
God of War 3 without a shadow of a doubt. The cronos segment was absolutely staggering in scale.
Without a doubt my first most major epic game was Star Con II (http://en.wikipedia.org/wiki/Star_Control_II)
It was a story, an action game, a novel, and different depending on how you play. It was amazing.
For modern games I would say, Halo: Reach. It was the first Halo game I played all the way through. It was so complete that I just felt like a friend had died when I finished. I just sat there staring at all the credits. I really connected and felt like a huge fight/campaign/adventure was over.
