How does the crossbuy stuff work exactly? I am actually tempted to buy the game off of PSN but I would only put the money down if my brother and I could play together/against each other with him on the PS3 and me on my PSV.

You buy the PS3 version and get a download code for the Vita version with it. I think it goes for both the retail PS3 version and downloadable version. I'm not 100% sure if it has to be tied to the same account or not. Maybe someone else in here knows the answer to that?

I'm pretty sure that when you buy retail you get the PS3 game on disc, an online pass for multiplayer and a code for the Vita version. So you could give one version away but the online pass unlocks multiplayer only on one account. So if you split you would need to buy an additional online pass.
I also think that when you buy off of PSN, both versions will be unlocked on that account. I don't think there are any codes in play.
