Mine would go something like this:

FPS: Singularity
TPS: Gears 3
Action/Adventure: Uncharted 3
RPG: Fallout 3 (maybe Skyrim eventually, don't know yet).
SRPG: Valkyria Chronicles

@Op, if I had to classify Uncharted 3 as a TPS, it wouldn't make my top 5 as the shooting is EASILY the worst part of that game. Not to say the game isn't a great game, but I find it hard to believe that anyone would choose the shooting in Uncharted 3 over the much more refined shooting in Gears or even something like Vanquish.

Action adventure: Assassin's Creed II

FPS: Bioshock

RPG: Elder Scrolls IV: Oblivion

Platformer: Super Mario Galaxy

Racing: Mario Kart DS

TPS: Gears of War 2

Puzzle: Super Stardust HD

Fighting: Virtua Fighter 5

Maybe not the best in each genre, but the ones I've had the most fun with. Bioshock, for example, had a dark, haunting atmosphere and some really creative weapon choices.
