Why have I not heard Epica before? It so so over the top and EPIC, which is how I love my metal.

They have some pretty epic musics, and they have been around for a while (since 2002, when Mark Jansen left After Forever). They carry on with the After Forever legacy of mixing Symphonic metal with epic chords and powerful female voices (Simone Simmons is a goddess, both in voice and features ).
I can point you towards a few personal favourites of mine from Epica, such as Burn to a Cinder, Blank Infinity, Cry for the Moon, Unleashed, Semblance of Liberty, Consign to Oblivion, Quietus, Feint, Chasing the Dragon, Never Enough, Martyr of the Free Word, Sancta Terra, Mother of Light and Illusive Consensus.
Their best albuns, so far, have been The Phantom Agony and Consign to Oblivion, though their latest one, Design your Universe is pretty epic as well. I also recommend you (if you enjoyed the original versions) to listen to their rendition of the Imperial March and POTC themes.
