But Nintendo is not developing it, Platinum is. If Platinum doesn't want to show something yet or if they feel the game isn't ready to be shown off yet, then what do you want Nintendo to do? Turn around and say 'No! We're funding this game. We're publishing it. You're going to show it off when we SAY you do?' First off, that's a terrible way to do business and is a sure-fire way to sour relations between the two. Secondly, Platinum is much more experienced in making those type of games then Nintendo is, so they have a much better idea of when it's ready to be shown off. Lastly, Nintendo is a developer themselves and understands where Platinum is coming from if they say "It's not ready yet. We need more time." They're not going to force or rush Platinum with something they're obviously more familiar and experienced with making than they themselves. Especially since they're not in any quick rush or need to do so. You'll see Bayonetta 3 when Platinum and Nintendo both agree it's time and the game is ready to be shown. And that's all there is to it.

As for the being pointlessly secretive point: Remember is what Nintendo was like during the old days. They were notorious for showing off games and announcing release dates that were actually years before they would come out. They would constantly delay them over and over again because it wasn't ready in the time they originally planned. Square Enix basically took over Nintendo's role in that regard this generation.

Twilight Princess, Skyward Sword, Breath of the Wild, Super Mario Galaxy, Smash Bros. Brawl, Metroid Prime 3, Metroid: Other M, half the Wii U's library. It was always a cycle: Nintendo shows of the game; Everyone gets super-hyped; They announce a release window; Some people get excited; Some people groan and scoff saying (No way the game is going to come out at that time); We go months on end without hearing about the game; The game gets an update/trailer; Everyone gets hyped again; The game gets delayed; Everything gets disappointed; Rinse and repeat until the game finally came out. All because Nintendo let the cat out of the bag too early and made promises on dates and deadlines they ultimately couldn't keep.

With the Switch, they have been cutting back on that significantly. ARMS, Splatoon 2, Xenoblade 2, Fire Emblem Warriors, Mario & Rabbids, Super Mario Odyssey, Kirby Star Allies, Super Smash Bros. Ultimate, Link's Awakening, Mario Maker 2, Super Mario Party, Fire Emblem: Three Houses, and Luigi's Mansion 3 all released more or less than a year of when they were announced. Three Houses and Luigi's Mansion 3 were revealed roughly 13 months before they released. While the other games were revealed and released within a year; Mario & Rabbids had 2 months between reveal and release, and when those games got a release date/window, they actually came out on that date/window, with no delays. The only games I can count, off the top of my head, that have actually gotten delayed are Yoshi's Crafted World, Animal Crossing: New Horizons, and Metroid Prime 4. 

There mentality for the Switch is basically, "We're not going to reveal it or show it off until we are absolutely, 99.9% sure it's coming out on the date/window we have planned. It's ready when it's ready. Not a moment sooner."

They announced Bayonetta 3 as in development way back in 2017, so they've already done the "make fans wait a ridiculous amount of time without showing them anything" thing. At this point they've had literal years to work on it, there's no way it's still not ready for even a trailer.
