I also recommend you to play both Final Fantasy IV and VII.
IV is in my opinion the best "classic fantasy themed" game of the series, the one with the most memorable characters and story along with VII.
VII is a masterpiece and the best futuristic themed game in the series.
You can play IV in its original form on SNES or play the DS 3D remake, while for VII you could go with the original PS game or wait next year for the PS4 remake.
