When do you have enough of an unfinishable game?

Yes, but those racing games have lots of cars for you to use, so there's always another car that may suit your driving style better or that works better on certain track. And strategy games don'y only have missions, they also have lots of different scenarios, sometimes even randomly generated, where you can play with every faction of the game.

Basically, those genres can last as much as you want them to last... and that's before we add multiplayer into the equation.

Well, I'm mainly a single-player guy, and I consider the game beaten when I finish the main section of it.
