I stick with Dragon Quest and Pokemon for the most part. They're games that for me never get old. I don't play a ton of JRPGs which is why I still have a high tolerance for them. I try my best to avoid generic anime JRPGs, or action RPGS where all you do is spam buttons. I love DQ and Pokemon because of the strategy that these games make you take into consideration. Games like Final Fantasy XV, Tales, etc. aren't really games I play anymore because it's more about looking cool than actual gameplay and strategy.

I think based off your interests as you said, Dragon Quest XI should be great, Ni No Kuni II, and Octopath Travelers as well. While most western RPGs focus on being endless experiences, I appreciate the linearity of games like the ones I've mentioned above. I think you just need a reset or games that tap into that nostalgia and feelings you've had as a kid. Overall, I do think we need more retro indie content that tries to emulate NES, Master System, Snes, Turbografx, Genesis, PS1 and Gameboy RPGs which is why I'm so hyped for Octopath travellers.
