The first thing is that you aren't installing the game from the disk you put into your xbox1, you put the disk in to confirm ownership of the game and then your system will download an xboxone compatible version of the title, maybe check to make sure you're connected to the internet when you try to play the games or do you happen to be using re releases of the games like greatest hits versions? I know DSIII has a bunch of different variations, as does Fable 2/3 GOTY versions etc, could be that the versions you have are not added to the list of BC games just yet, I'm sure if that is the case it'll come shortly.

Just to be sure, your disks are clean and non scratched right? like they work fine in a X360? the system needs to clearly be able to read the barcode like data on the innermost ring of the DVD

Yes, they are good condition disks.  I've always been good with maintaining clean/unscratched disks in their proper cases.  And, I'm always connected to my internet.  Like you mention, the only thing I can figure is my copy of Fallout 3 being the "Game of the Year Edition".  But, that doesn't explain Dungeon Siege III and Fable II.  Those are both the standard versions.

Odd, Mass Effect was the only one of the 4 you listed available on the preview of backwards compatibility games, is your xbox fully up to date? guessing it is since you got that downloaded.

As in http://www.xbox.com/en-IE/xbox-one/backward-compatibility/available-games from that list your one game working would be correct.
