I agree that holding 2 weapons at a time is kind of weird and annoying at first, but you'll get used to it (at I least I did). I'm currently playing on 1999 mode and believe me that doing melee attacks will result in your death, and it takes A LOT of melee attacks to kill a single enemy, in what level are you playing?
Detection and stealth mechanics aren't really present in the game, so you shouldn't even try it.
